Almond Snack Balls

Once you have your almond milk safely made, this is a way to get two tasty treats for the price of one! These are also a good substitute for the various commercial spherical snacks, especially if you’re not all that fond of dates (as I’m not!).

These can certainly have dates in them if you want, but they can also be completely date-free. They’re high in fibre, nice and chewy, and have a much lower sugar content than their commercial relatives. You can also adjust the additives to suit your own tastes. What more could you ask of a snack?

This recipe is heavily modified from one I found online, and you may wish to heavily modify it further. Some alternative ingredients are suggested – experiment until you get something that suits your taste.


1Put all the ingredients in a food processor with a metal blade and blend until well mixed.

2If things turn obstinate and refuse to mix, add a little more melted coconut oil.

3Form the mix into small balls (size is up to you!) and roll in coconut or drinking chocolate.

4Store in a covered box in the fridge for as long as you can get away with, which is unlikely to be more than two or three days.

5These can also be frozen and thawed as needed. They take very little time to thaw, and some people like to gnaw on them while they’re still quite frosty... (just watch the teeth!).


1 cup leftover almond pulp (this can be either used straight after making almond milk, or kept in the fridge, covered, for a day or two, or frozen in a small container until needed)

1 cup coarse desiccated coconut shreds

4 to 5 Tbsp coconut oil, melted (if you don’t melt it nothing will mix together...)

1/3 cup almond butter (or crunchy peanut butter for a cheaper product with a slightly different flavour. I actually prefer the peanut version)

2 Tbsp ground flaxseed (Buy the seeds at the supermarket and grind them in an electric coffee grinder as needed. Store any leftovers in a covered container in the freezer)

3 Tbsp cocoa powder

1 Tbsp vanilla extract

4 Tbsp chopped dried fruit – I like a mixture of glace ginger and low-sugar dried cranberries but use whatever you like best (including dates, if you must!)

2 Tbsp liquid sweetener – maple syrup or liquid honey will both work fine
