Apple Sauce Muffins

These are moist and delicious, and very easily convertible to dairy-free.

  • Cook: 20 mins


1Melt the butter in a saucepan.

2Add the eggs and sugar and whisk well to combine.

3Add the stewed apple and the dry ingredients and mix well.

4Place in oiled muffin tins and bake at 210C for 15 to 20 minutes or until well risen and lightly browned.

5Allow to cool in the tins for about 5 minutes before removing to a wire rack.

6The recipe makes 12 to 14 muffins


3 eggs

60g butter (or dairy-free margarine)

½ cup sugar

1 cup dry, lightly sweetened stewed apple (Granny Smith or Cox’s Orange do well)

1 tsp cinnamon

1 tsp mixed spice

240g (1 ½ cups) Gluten Free Goodies Cake and Biscuit mix

3 level tsp Gluten Free Goodies baking powder
