Apple & Sultana Muffins

I really like these.  They have all the characteristics I have proclaimed above for blueberry muffins, but don't stain your shirt front blue!

1Melt butter and use a little to grease muffin pan

2Add to the melted butter the eggs, milk and sugar and mix well

3Mix together the apples, sultanas and sherry

4Add the fruit and sherry mix, together with the flour, Baking powder and spice, to the egg mix

5Fill muffin tins nearly to the top. The mix will look very wet. It’s meant to! Don’t worry.

6Bake at 210C for 20 – 25 minutes, or until firm and golden brown.


1 1/2 cups apples, peeled, cored and diced (granny smiths work well)

1/2 cup sultanas

2 tbsp sherry

1/2 cup sugar

2 eggs

3/4 cup milk

100g melted butter

1 tsp mixed spice

2 1/4 cups Gluten Free Goodies Cake and Biscuit Mix (360g)

5 level tsp Gluten Free Goodies Baking Powder
