Baked Fish

I also had a craving for Fish and tried a new recipe out. Delicious!

Directions

1Preheat oven to 200 degrees

2Cut 4 pieces of baking paper big enough to wrap each serve of fish

3Place fish in centre of paper and season with salt, chilli powder, garlic and olive oil.

4Top with peaches, onions and bell peppers.

5Seal the parchment paper around the fish

6Bake 15 minutes or until the fish is flakey and opaque.

7Serve warm with mashed carrots, parsnips and peas.

Ingredients

4 Fillets of snapper or Wharehou

½ teaspoon sea salt

½ teaspoon chilli powder or flakes

2 cloves garlic minced

1 tablespoon of olive oil

1 cup of thinly sliced peaches

1 cup of thinly sliced onion

½ cup sliced red peppers
