Banana Coconut Bread

This is a very tasty, low-sugar loaf – great for afternoon tea!

Directions

1Preheat oven to 180C

2Grease and flour a loaf tin

3Place butter, eggs, vanilla and bananas in a bowl and whisk to combine

4Put all dry ingredients into another bowl, then add the wet mix and combine thoroughly.

5Transfer to the loaf tin.

6Bake for about 60 minutes or until a skewer comes out clean.

7Cool in the tin for ten minutes before removing to a wire rack.

8Serve sliced, with butter and lemon honey. Yum!

Ingredients

¼ cup sugar

125g melted butter

2 beaten eggs

1 tsp vanilla extract

3 ripe bananas, mashed

1 cup (160g) Gluten Free Goodies Company Cake and Biscuit mix (either light or rich will do fine)

2 tsp Gluten Free Goodies Company baking powder

1 cup desiccated coconut

1/8 tsp nutmeg

½ tsp cinnamon
