Black Beans, Kumara & Rice

This is a tasty vegan dish, which can be made even more delicious for those who are not vegan by adding a couple of poached eggs...

The choice is yours!


1In a large frying pan, sauté the garlic, onion and kumara in the oil for 2 to 3 minutes.

2Add the chili powder, paprika and cumin and stir briefly until fragrant.

3Add the vegetable stock and beans, and bring to the boil.

4Reduce the heat to a simmer, cover the pan and cook for a few minutes until the kumara are soft.

5Stir in the lemon or lime juice and parsley/coriander .

6Serve hot over rice.


3 cloves garlic, peeled and finely chopped

2 large kumara, peeled and cut into roughly 2cm cubes

1 onion, peeled and diced

3 Tbsp mild cooking oil

1 420g tin black beans, washed and drained

1 420g tin cannellini beans, washed and drained (or you can use any other combination of cooked beans that you enjoy)

1 cup vegetable stock

½ tsp mild chili powder

½ tsp smoked paprika

1 tsp cumin

1 Tbsp lemon or lime juice

¼ cup chopped fresh parsley or coriander leaves

Cooked white or brown rice to accompany
