Black Beans, Kumara & Rice

This is a tasty vegan dish, which can be made even more delicious for those who are not vegan by adding a couple of poached eggs...
The choice is yours!
1In a large frying pan, sauté the garlic, onion and kumara in the oil for 2 to 3 minutes.
2Add the chili powder, paprika and cumin and stir briefly until fragrant.
3Add the vegetable stock and beans, and bring to the boil.
4Reduce the heat to a simmer, cover the pan and cook for a few minutes until the kumara are soft.
5Stir in the lemon or lime juice and parsley/coriander .
6Serve hot over rice.
