Blueberry Sauce with Lemon Cream

This is rich and tastes magnificent, but you only need a little! I think it is at its best as a sauce over vanilla ice cream – parfait-style.

Directions

1Make the blueberry sauce and cool

2Whip cream with icing sugar, then fold in the yoghurt and lemon honey.

3Partly fold in the blueberry sauce to taste.

4Spoon over vanilla ice cream in parfait glasses, and top with a little extra blueberry sauce for colour.

Ingredients

I recipe of blueberry sauce (see recipe below)

300ml cream

2 tsp icing sugar

½ cup thick natural yoghurt, Greek style is ideal

3 tbsp lemon honey (see the jams, preserves and fillings section)
