
Carrot, Kumara & Ginger Fritters

This is adapted from something I found in a magazine in a doctor’s waiting room (as you do). Although there seems to be very little in terms of quantity, this produces quite enough for three or even four people.
Tasty, easy to do, and a good alternative to takeaways when you’re feeling desperate!

Directions
1Using a food processor, finely chop the carrot and kumara.
2Add the remaining ingredients and pulse until well combined.
3Fry tablespoonsful in hot oil until golden brown (about 3 minutes per side at medium heat, but watch them carefully).
4Serve with your favourite dipping sauce and a salad, and much as I hate to admit it, they’re also really nice with homemade potato chips!
Ingredients
1 large peeled carrot, cut into chunks
1 large peeled kumara, cut into chunks
1 small onion, peeled and diced
1-2 tsp grated fresh ginger root
1 tsp yellow curry paste (or green if you prefer)
½ tsp Gluten Free Goodies Company baking powder
A splosh of sweet chilli sauce (as you feel inclined)
