Directions

1Mix together and place in oiled muffin tins. The recipe makes 12 good-sized muffins. Bake 15 - 20 min at 220C or until nicely risen and firm to the touch. Cool in tins for 5 to 10 minutes then remove to a wire rack to cool .

Ingredients

1 cup milk or water (I used water)

3 eggs

75g butter, melted

1 cup grated carrot

1/2 cup sultanas

1 tsp cinnamon

1 tsp nutmeg

3 tbsp apricot jam
