Kids love these, and they make a really tasty lunch (even for grownups).
- Prep: 10 mins
- Cook: 15 mins
1Whisk eggs, salt and pepper
2Add flour and baking powder and whisk thoroughly.
3Add sweetcorn and cheese and blend well
4Cook in a mixture of 25g butter plus a few tablespoons of cooking oil, or in pure vegetable oil if preferred, until well risen and browned on both sides.
