Courgette & Feta Fritters

These are simple to make, tasty, and use up three courgettes at a time.
If you have an enthusiastic courgette plant in your garden over the summer, this is the recipe for you!
1Place the courgettes into a tea towel to squeeze out any liquid.
2In a bowl combine the garlic, eggs, courgettes, parmesan, feta, parsley, mint, flour, salt and pepper.
3Heat the oil in a frying pan to a medium heat. Place large tablespoons of the mixture into the pan. Cook for 3 or 4 minutes then flip and cook for another 3 minutes on the other side.
4Serve immediately, with salad or cooked vegetables of your choice.
