Dairy Free Chocolate Brownies

This is modified from a recipe found online. I didn’t expect it to work and was delighted to find it was actually very nice – lighter in texture than a normal brownie but moist, rich and dark in colour and not too sweet (and very easy to make).
1Preheat the oven to 180°C and oil a 20cm square baking dish.
2Place all the dry ingredients and the chocolate in a bowl and mix well.
3In a small bowl, whisk together the apples and eggs.
4Mix the wet and dry ingredients thoroughly and transfer to the prepared baking dish.
5Bake for 30-40 minutes, checking after the first 25 minutes to make sure nothing is burning! The mix will go very dark, due to the baking soda and the quantity of cocoa. Don’t be alarmed by this.
6The middle will still feel slightly fudgy when done.
7Allow to cool for 10 to 15 minutes before attempting to cut a slice to try...
8To keep it dairy-free, serve with coconut ice cream.
