
Doughnuts to die for

I recently acquired a doughnut maker – a weird little electrical implement that looks vaguely like a hedgehog or some other small innocuous animal. And I have discovered that I can make real mini-doughnuts, with holes, that taste really, really nice! They freeze well, if there are any left...

Directions
1In a large bowl, mix the Pikelet and Waffle mix, baking powder and sugar.
2Add the softened butter, eggs and milk and beat, preferably with a hand-held electric mixer, until the mixture is smooth and creamy.
3Preheat the doughnut maker for 4 to 5 minutes. Using a dessertspoon, fill each cavity about half full.
4Close the lid and cook for about two minutes or until the doughnuts are golden brown and soft to the touch.
5Carefully remove to a wire rack and repeat the procedure.
6Brush the hot doughnuts with a small amount of melted butter, then roll them in cinnamon-sugar mix (about 1 to 2 tsp cinnamon to 1/2 cup of sugar).
7Eat immediately, or freeze the leftovers. They can be microwaved or put in the oven briefly to thaw them when wanted.
