Fudgy Apple Mufifns

For the chocolate enthusiasts among us… These are once again moist and tasty muffins with a gently chocolaty flavour.

1Melt the butter and the chocolate or chocolate spread together and allow to cool a little, then add the applesauce, eggs, sugar and vanilla and whisk well to combine.

2Add the flour and baking powder and mix well

3Bake in oiled muffin tins at 210C for 15 to 20 minutes, or until well risen and lightly browned.

4The recipe makes 12 to 14 muffins.


70g butter

60g chopped cooking chocolate OR choc chips OR hazelnut chocolate spread. (The latter works very well and is easy to use!)

1 cup dry, slightly sweetened apple sauce (Granny Smith or Cox’s Orange apples work well)

3 eggs

½ cup brown sugar

1 tsp vanilla extract

240g (1 ½ cups) Gluten Free Goodies Cake and Biscuit mix

3 level tsp Gluten Free Goodies baking powder
