These sound a bit weird but I like the taste. I can only suggest you try them and see what you think! They are particularly nice with tangy apple syrup, or with maple syrup.
- Prep: 10 mins
- Cook: 10 mins
1Beat eggs and sugar until thick and creamy.
2Add flour, baking powder, baking soda, coffee and spices and mix well with milk until a suitable consistency is reached.
3If the mix thickens on standing, add a little more milk as you go along.
4Cook in a non-stick frying pan and store in a warm oven while completing the batch.
5These can also be made as pikelets by keeping the mix a little thicker.
