Heart warming pudding

1Either tear the bread into pieces and place in greased ovenproof dish or butter slices and arrange in dish. Combine the dried fruit and cinnamon then sprinkle the mixture over the bread.

2In a cup use just a little of the milk and add the Purebread Pancake, Pikelet & Waffle Mix – mix until smooth. Whisk the eggs in a large microwave proof bowl, add the milk mixture, sugar and golden syrup. Whisk again then add the remainder of the milk slowly until all ingredients are combined.

3(Note this liquid mixture makes wonderful custard – simply microwave on high in one minute bursts, stirring after each minute until the custard thickens and is ready to serve).

4For this recipe, microwave the liquid mixture for three one minute bursts, stirring after each minute. With the custard mixture partially cooked, pour the mixture over the bread pieces or slices. Press bread down gently with a fork so that the liquid mixture is soaked up.

5Place dish into an oven preheated to 180 degrees Celsius for 30 minutes.

6Serving Suggestion:

7Serve warm with additional fresh fruit and yoghurt Pudding can be left to cool and warmed in a microwave.


Slices of Purebread Gluten Free bread – I used Purebread Young Buck

600ml milk

2tbsp Purebread Pancake, Pikelet & Waffle Mix

2x eggs

1tbsp of sugar or sugar substitute

3tbsp of Golden Syrup or liquid honey

3tsp cinnamon

One cup of dried fruit – use raisins, sultanas, cranberries or chopped dried apricot etc
