Light Spicy Fish Curry

This is another fish recipe shamelessly stolen from my friend Jenny. It is delicious and very quick to make.

Directions

1Cut the fish into 2 cm cubes

2Heat butter (or oil if you prefer) in a large frying pan and sauté the onions until soft.

3Add turmeric, coriander and chilli and cook briefly.

4Add fish, coconut milk, yoghurt and lemon juice.

5Simmer gently, stirring occasionally, for about ten minutes or until fish is cooked through.

6Serve with rice and salad.

Ingredients

500g skinless, boneless fish

3 tbsp butter

2 onions, finely chopped

1 tsp turmeric

1 tsp coriander

¼ tsp mild chilli powder

½ cup coconut milk

1 cup unsweetened yoghurt

Juice of 1 lemon

Salt and pepper to taste
