Cheap, quick and tasty – what more can you ask? This recipe uses a specific spice mix, which is easiest to deal with if made up in bulk and stored in an airtight jar. This makes it really quick to prepare the dish on future occasions.

1Fry the mince, onion and garlic in the oil until well browned and all the water has evaporated.
2Add the salt, pepper and nacho spice mix and stir well over medium heat for about a minute.
3Turn the heat to low and add the drained beans. Stir gently for a minute or two to heat through.
4Add tomato sauce as you like, to moisten the mix and add flavour.
6Serve with corn chips, grated cheese and a green salad. (One with lots of tomato, cucumber and spring onion in addition to lettuce is very nice, and avocado goes well too).
Nacho Spice Mix;
4 Tbsp ground cumin
2 Tbsp ground coriander
1 Tbsp mixed spice
Put all three spices in a jar with a lid and shake thoroughly. Keep this, labelled, as a stock mix and it will do several rounds of the recipe.
1 onion, diced
1 garlic clove, peeled and crushed
2 to 3 Tbsp cooking oil
1 x 400g tin red kidney beans, well washed in a sieve and drained
½ tsp salt
Ground black pepper to taste
3 tsp nacho spice mix
Tomato sauce, about ½ to 1 cup, to moisten meat and bean mix as desired
