This is included because last year I managed to grow enough oranges that I felt obliged to do something with them! They were a bit sour for normal munching, but they turned into very good marmalade instead.

- Cook: 20 mins
1Chop in a food processor to desired particle size, using a little of the water with each load (it will probably take three or four small loads to process fully)
2Add the rest of the water and the lemon juice and bring to the boil in a large saucepan.
3Reduce to simmer and cook, covered, for 1 ¼ hours.
4Add sugar, bring to the boil and boil until setting point is reached. This may take 20 to 30 minutes but varies with the oranges used. Test regularly by spooning a little mix onto a cold plate. If it forms a skin within 1 minute, it’s ready.
5Remove scum, then bottle in sterilised jars. It will make about 6 or 7 300g sized jars, and you will feel very proud of yourself!
