Salmon Cakes with Lemon and Sour Cream Sauce

These are tasty and cheap, and also good for you. What more can you ask? I found the original during an Internet search and have modified it slightly for gluten-free use.

Directions

1In a large bowl, combine all ingredients, then shape into six equal-sized patties.

2Melt the butter or heat the oil in a frying pan, add the patties and brown on both sides.

3Serve with Lemon and sour cream sauce

5Combine all ingredients in a bowl and mix well.

Salmon Cakes

1x 400 – 450g tin of salmon, drained and flaked

2 eggs, beaten

¾ cup gluten free breadcrumbs

1 onion, chopped

Salt and pepper to taste

Butter or oil for frying

Lemon and sour cream sauce

1 cup low fat sour cream

1 tsp grated lemon rind

2 tbsp lemon juice

½ tsp sugar
