
Scotch Eggs

These make really good picnic food and may even make the sandwich eaters jealous! A number of small butcheries now sell gluten-free sausage meat or make their own – ask around and you’re likely to find a source in most towns.
- Prep: 10 mins
- Cook: 30 mins

Directions
1Combine all ingredients except eggs and crumbs and mix well.
2Cover each egg in a handful of meat. (Use wet hands; it helps enormously)
3Roll each one in breadcrumbs.
4Bake in a preheated oven at 180C on fan bake (maybe 190 to 200C in a conventional oven) for 20 to 30 min until golden brown all over. It helps to turn them once or twice during cooking.
5Serve hot or cold, sliced in half.
