Spice Muffins

These are our current favorite in the muffin department – light and moist and very moreish!

1Melt butter and golden syrup in a saucepan. Remove from heat and add sugar and water and mix well

2Whisk in eggs and spices.

3Add flour and Baking Powder and blend lightly. The mixture will be sloppy. Don’t panic, all will be well!

4Place in oiled muffin tins (makes 12 normal or about 36 mini muffins)

5Bake at 210C for 15 to 20 minutes until well-risen and golden brown.

6Cool in the tin for 5 minutes before removing to a wire rack.


3/4 cup water

3 Tbsp golden syrup

65g butter or equivalent

1/3 cup sugar

3 eggs

1/2 tsp ground ginger

1/4 tsp nutmeg

1/2 tsp ground allspice

1 tsp ground cinnamon

320g Gluten Free Goodies Cake and Biscuit mix

3 level tsp Gluten Free Goodies Baking Powder
