Spiced Indonesian Peanut Biscuits

November 16, 2016

These are delicious (and only very subtly spiced). They were discovered accidentally while my daughter and I were trying to find something easy and exciting to make for an International Food Evening being held by her Girl Guide group.

1For the topping, put the roasted peanuts and the ¾ cup of icing sugar in a food processor or blender and combine until coarsely chopped. You can also do this by hand – it just takes longer!

2For the biscuit base:

3Cream the butter sugar and vanilla

4Add the whole egg and blend

5Add dry ingredients and knead to combine.

6Roll out about 3 – 4mm thick.

7Brush with whisked egg white and spread the peanut-icing sugar mix on top.

8Cut into fingers and transfer to oven trays.

9Bake at 180C for 15 to 30 minutes until golden brown.

10Transfer to wire racks to cool.

185g roasted unsalted peanuts (the easiest and tastiest and cheapest way of getting these is to dry roast your own, in a glass dish, in the microwave. Do them on high and turn every minute or two for about 5 or 6 minutes in total. Nice and fresh and not oily!)

3/4 cup icing sugar, gluten free

Biscuit Mix

125g butter

2 tsp vanilla essence

1 cup icing sugar, gluten free

1 egg

2 1/4 cups (360g) Gluten Free Goodies Cake and Biscuit mix

2 tbsp cornflour

1/4 tsp ground cloves

1 egg white, lightly whisked
