Spiced Rice with Potato & Green Beans

Another recipe found online (and modified to suit what was in the cupboard and the fridge!) while searching for new ways to use up leftover rice.

This is a quick and tasty meal, and could probably be adapted to accommodate almost any of your favourite vegetables. It serves 3 to 4 as a main course.


1Steam the beans and potatoes until just tender.

2Saute the onions in the oil until lightly browned, then add the spices and fry for 30 seconds or so, until fragrant.

3Add all other ingredients except the rice and lemon juice and heat through.

4Add the rice and lemon juice, mix well, and serve.

5Goes very nicely with a poached egg, and some steamed broccoli.


1 onion, halved and thinly sliced

1 potato, peeled and cut into roughly 1.5cm cubes

½ cup sliced fresh green beans

½ tsp ground cumin

½ tsp mustard seeds

½ tsp curry powder

½ tsp turmeric

2-3 Tbsp cooking oil

2 cups (or more) leftover cooked rice

2 tsp lemon juice
