This is a minor modification of the usual Gluten Free Goodies bread mix recipe, and it is really tasty, with a nice chewy texture.
Delicious fresh on the day it’s made, but it also freezes well and makes great toast!
1Combine the bread mix, yeast and sunflower seeds in a large bowl.
2In a separate bowl, mix the flaxseed with the 9 Tbsp of water, then add the cider vinegar and oil. Mix well with a whisk.
3To the flaxseed mix add the 400ml of cold water plus 50ml hot water, whisk again and mix with the dry ingredients.
4Place the mix in the bread maker pan and cook using a normal bread setting (not the gluten-free option) with a dark crust selection if that is available.
5Remove from the pan as soon as cooking is complete, wrap in a clean tea towel and stand on a wire rack to cool. Eat fresh on the day it’s made, or slice and freeze for toasting at a later date.

¾ tsp dried yeast (the plain kind, with no bread improvers!)
1 cup sunflower seeds
3 Tbsp ground flaxseed (grind your own in a coffee or spice grinder)
9 Tbsp water
1 tsp cider vinegar
4 Tbsp mild cooking oil (light olive oil, rice bran, grapeseed or anything else you enjoy)
400ml cold water plus 50ml hot water
