Carrot, Feta and Parsley Fritters (Gluten Free)

Another very tasty alternative to meat as part of a main meal. They are fritters, not patties, so the mix will be soft and needs to be spooned into the frying pan. They also match perfectly with any of our hamburger buns too!

Ingredients

  • 2 eggs
  • 4 Tbsp GFGC pikelet and waffle mix
  • Salt and ground black pepper to taste
  • 500g peeled carrots, finely grated
  • Chives, finely chopped (a good handful), or use 3 or 4 spring onions, chopped
  • ¼ to ½ cup chopped parsley leaves
  • 150g feta, crumbled
  • 1 lime, rind and juice
  •  

Directions

  1. Beat the eggs, flour, salt, and pepper until smooth.

  2. Add the carrot, chives/spring onions and parsley and mix well.

  3. Add chopped or crumbled feta and the lime rind and juice and mix well (use hands if necessary)

  4. Place large spoonsful into a frying pan on medium heat and cook for about 3 minutes on each side, or until golden brown and cooked through.

They are quite soft and sloppy but seem to hang together well enough to get in and out of the pan! Lime is a vital ingredient in these, so don’t substitute with lemons.
